American DRØM. Onward!

Flavour as the Ultimate Expression of a Place

We often talk about 'terroir' when explaining the unique character and flavour of a particular wine. This concept is equally applicable to the flavour profiles of DRØM peppercorns. The pepper vines and centuries-old cultivation methods that have been revered since the Angkorian empire; the microclimate in which they grow; the intimate knowledge the pepper farmers have of their land: all this lends Kampot peppercorns their unique flavour, fragrance and Protected Geographical Indication. More than a label, though, the PGI reflects the rich culture and tradition that make Kampot peppercorns an expression of a unique place.

Adding Black Pepper to Golden Milk

There's no shortage of health claims on the internet when it comes to Golden Milk. We were drawn to this warming and soothing drink because of its wonderfully complex flavours: the peppery turmeric, refreshing ginger, touch of honey and dash of cinnamon.
If its anti-inflammatory and antioxidant properties are further boosted by black pepper, we'll consider that a bonus!

DRØM Pepper at Olliffe Butcher Shop

We're super pleased to have partnered with a first-rate butcher shop. Olliffe has two locations in Toronto: Olliffe Butcher Shop (1097A Yonge St.) and Olliffe Leslieville (1378 Queen St. East).

Here's the clever caption they used when introducing DRØM to their customers: "Move over Maldon, slide down Fleur de Sel. DRØM Pepper perfectly finishes your plate in any season. Now at Olliffe."

Our cargo bike ("Boris the Bike") is chomping at the bit to make pepper deliveries irrespective of the weather.

RECIPE: Endives with Oranges, Almonds and Goat Cheese

After feasting on decadent food over the holidays, we're in the mood for something a little lighter these days. Fresh endives with juicy oranges, crunchy almonds, creamy goat cheese and coarsely cracked red pepper make for a refreshing appetizer.

Adapted from a recipe by The Smitten Kitchen

  • 3 Oranges
  • 3 Endives, leaves separated
  • 3 Ounces goat cheese, crumbled
  • 1/3 Cup sliced almonds, toasted
  • Olive oil for drizzling
  • Sherry vinegar
  • 1 Tablespoon chives, chopped
  • Freshly ground red DRØM Pepper to finish
  • Maldon sea salt or other flaky sea salt to finish

Serves 4 as an appetizer

Trim end off endives and arrange individually separated leaves on a platter. Fill each leaf with orange segments, add goat cheese crumbles and almond slices. Drizzle with a very thin stream of olive oil and a few droplets of sherry vinegar. Top with chives and finish each endive leaf with red DRØM Pepper and flaky sea salt.
